A taste of the American South

Sometimes I watch Gone With The Wind or Paula Deen and wish that the genteelness wasn't just a facade; that some states weren't trying to take away my human rights.

If anyone has been following the news lately, you might have noticed that state legislatures are drafting and passing bills that dehumanize a whole sector of society - from groups advocating bullying through the religious freedom argument, anti marriage equality groups, the attacks on Planned Parenthood, and laws trying to regulate the choices I make about my womb - the list goes on and on.

And yet, the region is rich in delicious foods, cornbread being one of my favorites. Slightly sweet, buttery...

Cornbread




Ingredients
1/2 cup softened butter
2 eggs
1 cup flour
1 1/2 cups cornmeal
1/2 t baking powder
1/2 cup milk
1/2 cup buttermilk or sour cream

Preparation
Preheat oven to 190 degrees celsius. Line muffin tin. In a large bowl, stir together all the ingredients, adding milk last. Stir in any additions, such as cheddar, scallions, bacon, or sweet filling like chocolate. Spoon batter into muffin cups. Bake 20 minutes or until a toothpick comes out clean. Let cool.
